leigh-eo-bson: Implemented EOMongo wrappers using existing JSON encoders.

leigh-eo-mongo: Modified example to use JSON intermediate. This is a hack, but it does result in the same format we would have wanted to serialize directly through BSON without any of the work.

leigh-eo-mongo: Added this new project and sketched out a Mongo serializer in the new Mongo4 driver.
