Increment to 2.5.0-SNAPSHOT

While I did not change the HTTP API, the core Java API did change a lot.
I touched most of the code in the S3Mock core, which nobody should use,
but you never know, since if somebody is using the direct Java
integration (in Unit tests), they could access any public Java method
or class in the S3Mock core as well...
